Ingredients:

For the Crust:

1 cup all-purpose flour
1/2 cup unsalted butter, melted 🧈
1/4 cup finely chopped pecans 🌰

For the Cream Cheese Layer:

1 (8 oz) package cream cheese, softened
1 cup powdered sugar
1 cup whipped topping (like Cool Whip) 🍦

For the Lemon Layer:

2 (3.4 oz) packages instant lemon pudding mix 🍋
3 cups cold milk 🥛

For the Topping:

1 cup whipped topping (like Cool Whip) 🍦
Lemon zest, for garnish 🍋
Optional: additional pecans for garnish 🌰

Directions:

For the Crust:

Preheat Oven: Preheat your oven to 350°F (175°C).
Prepare the Crust: In a medium bowl, combine the flour, melted butter, and finely chopped pecans. Mix until well combined. Press the mixture evenly into the bottom of a 9×13-inch baking dish.
Bake: Bake for 15-20 minutes, or until the crust is lightly golden brown. Allow to cool completely.

For the Cream Cheese Layer:

Mix Ingredients: In a medium bowl, beat the softened cream cheese and powdered sugar until smooth. Fold in the whipped topping until well combined.
Spread Layer: Spread the cream cheese mixture evenly over the cooled crust.

For the Lemon Layer:

Prepare Pudding: In a large bowl, whisk together the instant lemon pudding mix and cold milk until thickened.
Spread Layer: Spread the lemon pudding mixture over the cream cheese layer.

Add Topping: Spread the remaining whipped topping evenly over the lemon pudding layer.
