Fajita Chicken Casserole

🌶️ Fajita Chicken Casserole 🐔

Ingredients:

  • 2 lbs boneless, skinless chicken breasts, cut into strips
  • 1 packet fajita seasoning mix
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 large onion, sliced
  • 2 cups shredded Mexican cheese blend
  • 1 cup salsa
  • 1/2 cup sour cream
  • 2 tablespoons olive oil
  • Fresh cilantro, chopped (optional for garnish)

Directions:

Prepare the Chicken and Veggies:

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium-high heat. Add the chicken strips and cook until browned, about 5-7 minutes.
  3. Add the sliced bell peppers and onion to the skillet. Cook for an additional 5 minutes until the vegetables are tender.

Assemble the Casserole:

  1. In a large mixing bowl, combine the cooked chicken and vegetables with the fajita seasoning mix, salsa, and half of the shredded cheese.
  2. Transfer the mixture to a greased 9×13 inch baking dish.

Bake:

  1. Spread the sour cream evenly over the top of the casserole. Sprinkle the remaining shredded cheese on top.
  2. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.

Serve:

  1. Garnish with fresh chopped cilantro if desired. Serve hot and enjoy your Fajita Chicken Casserole! 🌶️🐔
