😋 Cheesy Chicken Rotel Pasta 😋

Ingredients:

  • 1 (16oz) box of pasta (mini penne works great)
  • 32oz Velveeta cheese
  • 2 cups heavy whipping cream
  • 6-8 boneless, skinless chicken thighs
  • 1 stick of butter
  • 2 cans Rotel
  • 1 (8oz) block of cream cheese

Directions:

  1. Prepare the Chicken:
  • Toss chicken thighs in olive oil and your favorite seasonings (I used smoked paprika, onion powder, ground turmeric, garlic powder, parsley, and black pepper).
  • Bake at 375°F for around 30-35 minutes. Let the chicken cool and then shred it.
  1. Cook the Pasta:
  • Boil the pasta according to the package instructions. Drain and add half a stick of butter to the hot pasta.
  1. Make the Cheese Sauce:
  • In a large pot, combine Velveeta, heavy cream, the remaining half stick of butter, cream cheese, and Rotel.
  • Stir over medium heat until everything is melted and well combined.
  1. Combine and Serve:
  • Add the shredded chicken and cooked pasta to the cheese sauce.
  • Stir until everything is evenly coated with the cheesy goodness.
