🧀 Cheesy Tater Tot Meatloaf Casserole 🥔

Ingredients:

  • 1 1/2 lbs ground beef
  • 1/2 cup onion, finely chopped
  • 1/2 cup bell pepper, finely chopped
  • 1 packet meatloaf seasoning mix
  • 1 egg
  • 1/2 cup breadcrumbs
  • 1/4 cup ketchup
  • 2 cups shredded cheddar cheese, divided
  • 1 (32 oz) bag frozen tater tots
  • 1/4 cup barbecue sauce (optional)

Directions:

Prepare the Meatloaf Base:

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the ground beef, chopped onion, chopped bell pepper, meatloaf seasoning mix, egg, breadcrumbs, and ketchup. Mix well until all ingredients are thoroughly combined.
  3. Spread the meat mixture evenly in a greased 9×13 inch baking dish.

Add Cheese and Tater Tots:

  1. Sprinkle 1 cup of shredded cheddar cheese over the meatloaf mixture.
  2. Arrange the frozen tater tots in a single layer on top of the cheese.

Bake:

  1. Bake in the preheated oven for 30-35 minutes, or until the tater tots are golden brown and crispy.
  2. Remove from the oven and sprinkle the remaining cup of shredded cheddar cheese over the top. Return to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.

Serve:
