Ingredients:

  • 1 pound thinly sliced beef (ribeye or sirloin works best)
  • 1 tablespoon vegetable oil
  • 1 large onion, thinly sliced
  • 1 large bell pepper, thinly sliced
  • Salt and black pepper, to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 cup sliced mushrooms
  • 2 cups shredded provolone and mozzarella cheese blend
  • 1 bag tortilla chips
  • Sour cream, guacamole, and salsa for serving
  • Fresh cilantro or green onions for garnish

Instructions:

  1. Heat vegetable oil in a skillet over medium-high heat. Add thinly sliced beef, season with salt, black pepper, garlic powder, onion powder, and smoked paprika. Cook until browned and cooked through. Remove from the skillet and set aside.
